Stir-Fried Pork - Carne Frita
1 1/2 to 2 pounds boneless pork, cut into 1 inch cubes
2 teaspoons salt
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
3 to 4 tablespoons extra virgin olive oil
3 large garlic cloves, minced
2 large onions, sliced
1 (4 ounces) pimientos, chopped
2 tablespoons stuffed Spanish olives
Season pork cubes well with salt, garlic powder and black pepper. Heat olive oil, brown meat on all sides. Add garlic and onions. Cook on low heat until onions are translucent. Add pimientos and olives. Serve piping hot. Good with white rice and black or pinto beans.
